Cold draw: dark chocolate-covered dried strawberry
 
1st Third: soft on the palate to start, with notes of Mexican hot chocolate and something minty yet peppery, like hoja santa 
 
2nd Third: black peppercorns more prominent yet still very smooth flavors, like a rich dark amaro, aroma of worn leather
 
Final Third: charred cedar and the spice continues to build into medium-plus territory
 
Overall: a very smooth ride through compelling flavors and deep complexity
